I don’t think the lowest watched cup finals since 07 is simply due to “undesirable matchup”, this series was great, Vegas was entertaining, I think part of the reason was the broadcasting changes

The broadcasting probably has an impact maybe, but it's definitely more because nobody cares about either team outside of the fans of said teams.

The series was also not good lmao. It was 5 games, Vegas clearly outmatched an injured Panthers team and the final game was 9-3. It was pretty 1-sided.

Games not starting until 9 my time absolutely killed it for me. I didn't watch a single game.

Of course this doesn't account for teams heavy in a particular nationality that got many eliminations in the earlier rounds.
It doesn't account well for if some nationality has a lot more weighting towards goalies or D vs. forwards, or vice versa.
