Ehlers is better IMO, but Scheifele is for sure better than Connor
Honestly he's not, and I'd argue its not particularly close:

Thats scoring since 2017
Scheifele is 20th with 280 pts
Right behind Matthews and Tavares with 282 and right ahead of Rantanen and Malkin and Aho with 278 and 272 and 271
Ehlers is tied for 69th with 201 pts. He's tied with Couture and just behind Barrie and Dadonov and just ahead of Hertl and Horvat
For goals:
Scheifele is 19th with 111, right behind Laine and Kucherov and right ahead of Rantanen and Barkov
Ehlers is closer to Scheifele but still behind with 96 making a 3 way tie for 37th with William Karlsson and Malkin, just behind Gaudreau, Monahan and Tkachuk and right ahead PAccioretti, Stone, and Kessel.
Centre is both a more important position and more difficult position.
It also holds true in playoffs
Over those same years (http://www.nhl.com/stats/skaters?reportType=season&seasonFrom=20172018&seasonTo=20202021&gameType=3&filter=gamesPlayed,gte,1&sort=points&page=0&pageSize=100)
Scheifele is tied for 31st in points and 9th in goals
Ehlers is tied for 147th in points and 144th in goals
If we convert that to per game and say minimum games 15 games
Scheifele jumps to literally 6th in the league behind ONLY MacKinnon, Kucherov, Rantanen, Point, and Pastrnak in points
and SECOND in the league in goals per game behind ONLY MacKinnon
Ehlers is tied for 147th in PPG and 144th in GPG
Scheifele is quietly been about the 15th-20th best skater offensively the last 4 years and top 5 in the playoffs while being a good but not special 2 way C. His lack of love is astounding.
