We all know +/- doesn't tell the story.
But, what can we use other than the good old eye test to measure how good a player is defensively?

Personally, I don't think there's any basic stat that can help you assess a player's defensive game.
Some Corsi, Fenwick, xGA, xGF, +/-xGF stats can defiently help to you to tell the story but you also need to understand matchups, conditions, teams, linemates, etc.

If we are talking about a 2-way game, Alex Barkov, and Jonathan Huberdeau both have to be here. Eye test is the best!
Don’t pay attention to the players that I have.
I agree, eye test is the best.
But for example I don’t watch many avalanche games because I am from ontario which are different time zones
So I don’t know how good Girard for example is defensively
yeah hes a weird case study, his analytics can be great one year, average another year, than crash
Thats why I say we cant rely on analytics alone for a player, especially a Dman
Jones has actually only had one above average analytical year. It's like the opposite of the Jack Johnson debate when he was a king. Some thought he was great, some thought he was horrible and the analytics suggested he was awful.
Another similarity is Gardiner. His underlying numbers are fantastic, but people don't like him because he makes big defensive mistakes at the worst time.
Jones is the go to for the analytics community not liking someone who's beloved by the base community.
